Botanical name: Cinnamomum zeylanicum.
The scent of cinnamon is one of the most recognizable scents in the world. The main producing countries of Cinnamon today are Sri Lanka, Vietnam, Madagascar and India.
The word cinnamon comes from the ancient Greek word "kanni", which means cane, to indicate the way it is wrapped as it dries (bobbins).
The taste of cinnamon is due to the essential oil which, although it only constitutes 0.5 to 1% of its composition, is very strong and aromatic.
Extraction Method
The essential oil is produced from the bark of the Cinnamon tree. Cinnamon essential oil is produced by distilling its peel as follows: First, the bark is soaked in seawater, then lightly beaten and distilled. It has a golden yellow color, with the characteristic smell of cinnamon and a very warm aromatic taste.
Its warm aroma and spicy taste are due to cinnamic aldehyde or cinnamaldehyde, which when reacted with oxygen as it matures, darkens in color and forms resinous compounds.
Properties
The properties of cinnamon are due to the essential oils, cinnamaldehyde, cinnamon alcohol and the aromatic substances contained in the bark of the plant.
The substance cinnamaldehyde is the main ingredient in the oil produced from the bark. Cinnamaldehyde has been shown to have a beneficial effect on platelets and helps prevent blood clots.
At the same time, it has been attributed significant anti-inflammatory properties. Cinnamon bark essential oil appears to help balance blood sugar levels, as well as to treat ulcers, heart disease and diabetes.
In addition, the high content of aldehydes gives it strong antifungal, antibacterial and antimicrobial properties.
